The Grape

From Bordeaux, Cabernet Sauvignon spread worldwide in dry and sunny locations, especially where the climate is windy and not humid. In Pignola, at 927 m.a.s.l., besides these conditions, Cabernet Sauvignon meets a warm sun and an ideal terrain, which provides the wine with its organoleptic strength; only a few places in the world have every year all these characteristics in balance.

GRAPE HARVEST

The training by spurred cordon provides a production so small as to balance the grape berry during the ripening. This phase ends with the grape harvest during the first decade of November. This terroir has a longer vegetative period than the average, therefore it triggers a grape bunch complete ripening, especially as regards grape’s polyphenolic components, creating a powerful and magnificent wine.

BOTTLING AND CONSERVATION

Cantina Giorni deals with all the phases of the winemaking, hence it manages the bottling and the conservation as well. The cellar has air-conditioned rooms with a computer-based system that can keep the optimal temperature during the whole process.

HOW TO DRINK AND PAIRING

The intense and dark colour reveals a seductive olfactory impact and a firm structure. The ripe fruity fragrance encompasses a nose of blackcurrant, black cherry and blueberry. These aromas mingle in the French oak, where the “élevage” process of wine takes place for about 24 months. The palate is full and rounded with intense and velvet notes that become even stronger as the wine ages. The wine matches with all kinds of meat and aged cheese as well; these pairings carry out a great sensorial experience.
